Leftover Oatmeal Breakfast Parfait

Description

An easy breakfast parfait that uses up your leftover oatmeal along with fresh fruit and yogurt.


Ingredients

Scale
  • 2 cups leftover oats
  • 2 tsp cinnamon
  • 2 tsp chia seeds
  • 1 cup yogurt
  • 2 Tbs honey or agave
  • 2 Tbs sliced / chopped nuts
  • 1/2 cup fresh or dried fruit
  • 2 tsp maca powder or nut butter

Instructions

  • Combine the cinnamon and chia with the leftover oats.
  • Portion out half of oats equally between two mason jars.
  • Add a layer of fruit divided between the two jars.
  • Add a layer of yogurt evenly divided between the two jars.
  • Add a layer of nuts evenly divided.
  • Add a layer of maca powder or nut butter on top of that.
  • Add a final layer of the remaining oats on top.
  • Cover and refrigerate up to three days.  Enjoy cold!
