Description

Smoked BBQ pork ribs in a sweet and spiced dry rub


Ingredients

Scale
  • 1 cup brown sugar
  • 1/4 cup smoked paprika
  • 1 Tbs garlic salt
  • 2 tsp ground coriander
  • 1 Tbs dried oregano
  • 2 tsp cumin
  • 1 tsp salt
  • 1/2 tsp ground fennel seed
  • 2 Tbs chili powder
  • 1/2 tsp ground black pepper
  • 2 rack of pork ribs
  • *sauce optional

Instructions

  1. Prepare your ribs by rinsing them in water and patting them dry with paper towels so that they’re not wet. Also remove the membranes on the under side of the ribs.
  2. Combine all of the spices and sugar, mix together then rub all over your pork ribs.
  3. Place the pork ribs in a 180F – 190F smoker for three hours uncovered.
  4. After three hours, remove the ribs and wrap in tin foil, then put back into the smoker for another 2 hours.
  5. After two hours, remove the ribs and unwrap them. Place them back in the smoker for 1 hour uncovered and increase the heat to 200F.
  6. After 1 hour uncovered, remove the ribs, wrap them back in tinfoil and let them rest 30 mins to an hour.
  7. Serve with sauce on the side.
  8. *if you like a saucier rib, slather them with sauce midway through the first three hour block and then again at the beginning of the final one hour block.
