Description
A simplified variation on the famous Stetson Chopped Salad from Cowboy Ciao in Scottsdale, Arizona.
Ingredients
Scale
- 1/2 cup mayo
- 1/2 cup buttermilk
- 2 tsp lemon
- salt
- pepper
- 1/4 cup fresh basil
- 1/4 c oil
- 8 oz Israeli Cous Cous
- 8 oz Cherry tomatoes
- 1/4 cup dried cranberries
- 1 cup chopped arugula
- 1/2 cup corn
- 1/4 cup pepitas
Instructions
- Combine mayo, butterminlk, lemon, salt, pepper, basil and oil in a blender and blend until smooth.
- Layer remaining ingredients in plastic cups with the couscous on the blottom.
- When ready to serve, pour dressing over salad and serve.
