Turkey and Cheese Kids’ Sushi

Description

A twist on a turkey and cheese sandwich, rolled in tortilla and sliced to look like sushi rolls.


Ingredients

Scale
  • 1 spinach tortilla
  • 2 Tbs hummus
  • 2 Tbs leftover rice
  • 1/2 carrot, sliced into long thin strips
  • 1 slice havarti cheese
  • 1 slice turkey deli meat

Instructions

  1. Place the tortilla on a clean work surface and spread with hummus from the middle down toward the edge, so that hummus covers half of the tortilla.
  2. Spread rice over top of the hummus and place the carrot strips on top of that lengthwise, horizontal with where the hummus edge is.
  3. fold the havarti in half twice and the same with the turkey and place both on top of the carrots.
  4. Starting with the edge of the tortilla closest to you, the side where the hummus, rice and fillings are, put your thumbs under the edge of the tortilla and start to roll the tortilla until you come to the unfilled edge on the other side.
  5. Secure the tortilla with an extra schmear of hummus.
  6. You should have a long stuffed cylinder and using a sharp serrated knife, sliced into “sushi rolls”.
  7. Serve or place in a bento box for a healthy, fun lunch.
