Description
A light pasta salad with tomatoes and mozzarella and a tangy sun dried tomato dressing
Ingredients

- 8 ounces pasta (rotini pasta recommended)
- ½ cup Traina Sun Dried Tomato Ketchup
- 1 Tbs lemon juice
- 2 Tbs pepperoncini brine
- ¼ cup oil
- ½ tsp dried oregano
- 1/8 tsp ground fennel
- 1 clove garlic
- 1/2 tsp salt (add more as needed)
- 1 pint cherry tomatoes, quartered
- ¼ cup pepperoncini, small diced
- ¼ cup basil chiffonade
- 8 oz fresh mozzarella cheese, 1 in cubes
Instructions
- Prepare pasta according to package directions, drain and place in a large mixing bowl.
- Combine Traina Sun Dried Tomato Ketchup, lemon juice, pepperoncini brine, oil, oregano, fennel, garlic and salt in a blender and blend until smooth and lightens in color (denoting emulsification).
- Add dressing, tomatoes, pepperoncini, basil and mozzarella to the pasta bowl.
- Toss to combine and serve garnished with extra basil.
