Description

A light pasta salad with tomatoes and mozzarella and a tangy sun dried tomato dressing


Ingredients

  • 8 ounces pasta (rotini pasta recommended)
  • ½ cup Traina Sun Dried Tomato Ketchup
  • 1 Tbs lemon juice
  • 2 Tbs pepperoncini brine
  • ¼ cup oil
  • ½ tsp dried oregano
  • 1/8 tsp ground fennel
  • 1 clove garlic
  • 1/2 tsp salt (add more as needed)
  • 1 pint cherry tomatoes, quartered
  • ¼ cup pepperoncini, small diced
  • ¼ cup basil chiffonade
  • 8 oz fresh mozzarella cheese, 1 in cubes

Instructions

  1. Prepare pasta according to package directions, drain and place in a large mixing bowl.
  2. Combine Traina Sun Dried Tomato Ketchup, lemon juice, pepperoncini brine, oil, oregano, fennel, garlic and salt in a blender and blend until smooth and lightens in color (denoting emulsification).
  3. Add dressing, tomatoes, pepperoncini, basil and mozzarella to the pasta bowl.
  4. Toss to combine and serve garnished with extra basil.
