Artichokes with Mustard Dipping Sauce

Description

Easy recipe for pressure cooking artichokes with a light creamy dipping sauce.


Ingredients

Scale
  • 2 medium to large artichokes
  • 1 lemon
  • 1 cup water
  • 1 Tbs salt
  • 1 Tbs oil
  • 1 cup sour cream
  • 23 Tbs prepared mustard

Instructions

  1. Take two large artichokes and trim the tip ends off and slice the very top off just to barely reveal the inner “choke” or the purple colored interior.
  2. Rub all over with lemon juice to prevent oxidation.
  3. Add the artichokes cut side down into a pressure cooker, add 1 Tbs salt and 1 cup of water, then seal and cook on high for 7 to 10 minutes (7 minutes for more medium sized, 10 for larger).
  4. Once the cooking is done, manually release the pressure and remove the artichokes to a cutting board to cool for a bit.
  5. Once cool enough to handle, cut down the center, starting at the stem down through the artichoke to cut them in half.
  6. This will reveal the whole choke, which you will want to remove with a spoon by scooping out the fuzzy part, but be sure to keep the heart meat in the center intact.
  7. Prepare your grill to 400F then rub the cut sides of the artichokes with oil (grapeseed is my preference, but olive oil or canola will work, too). Place the artichokes cut side down onto the grill and grill for 4 to 5 minutes just to get a char and extra flavor.
  8. Serve along with the mustard dipping sauce (just combine the sour cream and mustard).
