Frosted Watermelon Cake

I have been seeing these Watermelon Cake posts all over Pinterest.  I saw them an instantly wondered if they would turn out as awesome as suggested online.  I had a strange feeling that the whipped cream wouldn’t adhere to the watermelon because of the fruit’s moisture.  But, they were so darn cute and too well timed with the 4th of July that I had to give one a try.  Think it’ll work?

After this first attempt in the video, I used my lessons learned to make a second cake, which you’ll see in the photos below.  The lessons from the first try were:

-Make sure the whipped cream was very well whipped and firm

-Apply the nuts to the side of the cake before applying the decorative piping

-Refrigerate until ready to serve

I have already gotten great feedback from viewers about other things you could use in this recipe including shredded coconut, chocolate drizzle and sprinkles.  Of course, I’m a fan of the classic berries for the 4th of July.

My favorite part about this Watermelon Cake recipe is that you can literally eat half the cake and not feel guilty.  I did exactly that, and it was awesome.
