Decorating a Cake with Lisa’s Rum Cake

When Lisa’s daughter, Madi, told me she could assemble and decorate one of their wildly popular cakes in less than five minutes, I had to take her up on her offer.  She claims that her Mom is faster, but as you’ll see in this video, she’s pretty darn speedy:

One of the secrets to assembling these cakes is in keeping the cake and the fruit extremely cold.  It’s nearly frozen, which helps in keeping the cake sturdy as you build up so that it doesn’t shift when applying the whipped cream icing.

Too, another pro tip from Madi is to squeeze some of the icing out of the piping bag before piping borders onto your cake.  This will help remove any air pockets that could cause your icing to have a small explosion and mess up your beautiful piping work on your rum cake.

Of course, you could make a go at decorating your own.  But, as Madi said in the video, it wasn’t until her 1000th cake that they really started to look professional.  As with anything, it takes a lot of practice.
