Southwest Mason Jar Soup

Description

A southwest style easy soup for busy folks.


Ingredients

Scale
  • 1/2 sweet potato diced
  • 1/2 cup corn
  • 1/4 cup black beans
  • 1/2 cup diced tomatoes
  • 1/2 cube vegetable or chicken bouillon
  • 1 tsp taco seasoning
  • 12 cups of water

Instructions

  1. Place all ingredients except for the water into a mason jar and seal. *prepare multiple jars for lunches throughout the week
  2. When you’re ready to eat it, remove the lid, add desired amount of water to cover the vegetables and microwave on high for 5 minutes. Allow to sit for 3 to 5 minutes to cool then eat directly from the jar.

Caprese Pasta Salad in a Jar

Description

Simple caprese style ingredients with rotini pasta for an on-the-go lunch


Ingredients

Scale
  • 1/2 cup cooked rotini pasta (or favorite shape)
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded spinach
  • 2 oz diced mozzarella cheese
  • 2 leaves of basil minced
  • 2 Tbs favorite Italian salad dressing

Instructions

  1. Combine all ingredients except for the salad dressing in a mason jar. Place the dressing in a sealable plastic bag inside the jar on top of the other ingredients and close the jar with its lid.
  2. Keep refrigerated until ready to eat, then pour the dressing over the ingredients and eat straight from the jar.
