I don’t know what got into me! Well, I take that back. I published a ton of Mexican-ish recipes over the past two weeks because I adore the culture and cuisine of our neighbors to the south. Despite the fact that Cinco de Mayo isn’t a huge deal in Mexico (no, it’s not their Independence Day) I take it as an opportunity to go full tilt on my love of all things Latin. Some day, when I find the money, you’ll find me in my brightly colored, Dia de Los Muertos decorated, Saltillo tiled kitchen, sipping limeade out of a blue glass. For now, you all know what I’m working with, but some day…some day…

Mexican Style Street Corn
