Chicken Scaloppine

I get really excited when you guys request recipes.  When @disguyyy asked for help with Chicken Scaloppine on Twitter, I got downright amped up and hit the internet, scouring for input on the ultimate Chicken Scaloppine.  Of course, there’s the whole Scaloppini thing.  Aren’t the ‘e’ and the ‘i’ both plural in Italian, because, the…nevermind, you don’t want to talk about grammar.  You want fried chicken and pasta!

Chicken Scaloppine

Scaloppine is traditionally with chicken or veal and the only major requirement is that the meat is pounded thin before cooking.  Other than that, the sauce takes on different shades, from lemon to marsala, peppers to tomatoes.  I’m drowning in a sea of lemons from my recent lemon harvest, so I went the lemon/butter route.

@disguyyy, this video’s for you.  Oh, and for those who have been rinsing your pasta with water, this one’s also for you.
