Loaded Slow Cooker Sweet Potatoes

I need more sweet potatoes in my life and this is an easy way to serve them as a main course for dinner.  Crock Pot, to the rescue for a healthy, speedy, weeknight dinner: Loaded Slow Cooker Sweet Potatoes.

Loaded Slow Cooker Sweet Potatoes

Before you dash out the door in the morning, wash up some whole sweet potatoes, prick them with a fork, rub ’em with salt and oil, wrap them in foil and toss them in your slow cooker on low.  8 hours later, you can peel back the foil to find a perfectly cooked sweet potato.  From there, you can dress them up how ever you would like.  On this particular evening, we’re tossing in diced chicken, fresh spinach, diced peppers and a green goddess yogurt.

Of course, sweet potatoes are super versatile and you could top them with anything from beef chili to caramelized bananas and marshmallows.  This rendition, though, is super light and filling and the kids mowed it down…fast!

Loaded Slow Cooker Sweet Potatoes

Description

A way to cook sweet potatoes in a slow cooker and then loaded with healthy toppings.


Ingredients

Scale
  • 2 sweet potatoes
  • salt
  • 2 Tbs oil
  • 1/2 cup chopped spinach
  • 2 chicken breast chopped
  • 1/2 red bell pepper diced
  • 1/4 cup Fage greek yogurt
  • 2 Tbs fresh basil
  • 1 Tbs fresh lemon juice

Instructions

  1. Wash potatoes and prick the skin with a fork to make some holes on the surface.
  2. Rub the potatoes with salt and oil and wrap with foil so they are completely sealed.
  3. Place the foil potatoes into a slow cooker and put on low for 8 hours.
  4. Combine Fage, basil, and lemon juice and blend until smooth.
  5. After 8 hours, remove the potatoes from the foil and slit down the middle.
  6. Load up the potatoes with diced chicken, bell pepper, spinach and a liberal drizzle of the greek yogurt dressing.
  7. Serve!
