Breakfast Bruschetta

Okay, so calling this “bruschetta” is a stretch, but you can’t argue that it makes a fun twist for brunch.  It’s also kid friendly, as evidenced by my junior sous who joins me in the video for this super simple recipe.

He’s such a ham.  Where on earth does he get it?!?

Breakfast Bruschetta

Description

A twist on bruschetta with sweet toppings on an oat bread.


Ingredients

Scale
  • 8 ounces cream cheese
  • 1 Tbs peanut butter
  • ½ tsp cinnamon
  • 1 Tbs maple syrup
  • 1 small loaf of oat/wheat bread *unsliced
  • 1 apple, chopped
  • ¼ cup Craisins
  • ¼ cup toasted chopped pecans

Instructions

  1. Combine cream cheese, peanut butter, cinnamon and maple syrup in a bowl and combine with an electric beater.
  2. Spread cream cheese on top of bread slices and top with apple, craisins and pecans.
  3. Garnish with mint and serve.
