I’ve previously done a Breakfast Bruschetta, perfect for cooking with kids, but was recently asked to make a fun variation: banana bruschetta.
It’s the same concept of a sweet, kid-friendly bruschetta, but with bananas, walnuts and my new favorite snacking obsession: coconut chips. If you haven’t tried them, they’re not just dehydrated coconut. They’re crispy, crunchy, buttery pieces of coconut. I really like the ones made by Dang or from Trader Joe’s.
It’s a great after-school snack because 1) kids can “decorate” them all by themselves, even kids as young as 4. Let them go “bananas” piling up the fruit and nuts.
Banana Bruschetta
Of course, there are no hard and fast rules when it comes to bruschetta. You have complete license to riff on this in any way, shape or form. You can nix the cream cheese and simply spread a nut butter on toasts. Or go with a crunchy cracker instead of the toast rounds. Don’t like walnuts, or nuts in general? Go with a granola instead. It’s your snack, have fun with it!

Funky Monkey Kids’ Banana Bruschetta

Description
An easy after-school snack of toasts topped with bananas, walnuts, coconut chips and a creamy spread.
Ingredients
- 8 oz cream cheese
- 1 Tbs peanut butter or other nut butter
- ½ tsp cinnamon
- 1 Tbs maple syrup
- 1 small loaf of oat bread
- 1 banana
- ¼ cup coconut chips
- ¼ cup chopped walnuts
Instructions
- Combine cream cheese, peanut butter, cinnamon and maple syrup and mix until smooth.
- Spread cream cheese on bread slices and top with chopped banana, coconut chips and walnuts.
