Leftover Oatmeal
Who knew so many people were having the same problem I was with what to do with leftover oatmeal? My Leftover Oatmeal Cookies recipe is one my most popular recipes, so I figured I’d follow it up with my other favorite (and more frequently used) way of handling leftover cooked oats.
Sorta Overnight, but Not
I know that Overnight Oats are a popular thing, but I’ve just never been able to embrace that bandwagon. Something about the texture just never set right with me. So, this recipe is like a bridge between those overnight oats. It gives you the morning grab-n-go convenience with a better texture and uses up those leftovers.
I typically cook up a big pot of oats on Sunday morning for the family before church. But, instead of tossing the remaining oats left in the pot, I portion them into mason jars, layered with other goodies, then cover and keep in the fridge for up to three days. Some people may say, “ewwww…leftover cold oats.” If that’s you, then skip this recipe. I’m pretty sure if you’re a rice pudding fan, you’ll be down with this.
As far as the actual oats, my preference is for steel cut for a quality texture that’s more like rice than mush. My favorite brand, and photography client, is Coach’s Oats.
The Combo
Of course, you can change this up how ever you’d like. But, for me, I need something sweet, something creamy, something nutty and something crunchy. When berries are in season, the recipe posted below is my go-to. But, based on what’s in season for you or your preferences, change it up.

Description
An easy breakfast parfait that uses up your leftover oatmeal along with fresh fruit and yogurt.
Ingredients
- 2 cups leftover oats
- 2 tsp cinnamon
- 2 tsp chia seeds
- 1 cup yogurt
- 2 Tbs honey or agave
- 2 Tbs sliced / chopped nuts
- 1/2 cup fresh or dried fruit
- 2 tsp maca powder or nut butter
Instructions
- Combine the cinnamon and chia with the leftover oats.
- Portion out half of oats equally between two mason jars.
- Add a layer of fruit divided between the two jars.
- Add a layer of yogurt evenly divided between the two jars.
- Add a layer of nuts evenly divided.
- Add a layer of maca powder or nut butter on top of that.
- Add a final layer of the remaining oats on top.
- Cover and refrigerate up to three days. Enjoy cold!
