Okay, so calling this “bruschetta” is a stretch, but you can’t argue that it makes a fun twist for brunch. It’s also kid friendly, as evidenced by my junior sous who joins me in the video for this super simple recipe.

Description
A twist on bruschetta with sweet toppings on an oat bread.
Ingredients

- 8 ounces cream cheese
- 1 Tbs peanut butter
- ½ tsp cinnamon
- 1 Tbs maple syrup
- 1 small loaf of oat/wheat bread *unsliced
- 1 apple, chopped
- ¼ cup Craisins
- ¼ cup toasted chopped pecans
Instructions
- Combine cream cheese, peanut butter, cinnamon and maple syrup in a bowl and combine with an electric beater.
- Spread cream cheese on top of bread slices and top with apple, craisins and pecans.
- Garnish with mint and serve.

If you prefer a sweeter breakfast, you can use toppings like ricotta cheese, fresh berries, honey, and a sprinkle of nuts.
