Chocolate Cherry Instant Pot Steel Cut Oats

This Chocolate Cherry Instant Pot Steel Cut Oats recipe can be done in a flash with the pressure cooker settings or can be cooked overnight with the slow cooker settings.  That’s the magic of the Instant Pot.  It is so many appliances in one.

Know Your Oats

It’s important to note that this recipe calls for steel cut oats.  It doesn’t call for quick cooking steel cut oats or rolled oats or any other variety of oats.  They are steel cut which means they are the unprocessed oat “groat” that’s simply cut into two or three pieces.  They haven’t been flattened or processed in any way.

This does mean they take longer to cook because they still retain the hull, the tough outer “shell” of the oat, but they are also more nutrient dense.  I also prefer their chewy texture to regular oatmeal.  If you don’t like oatmeal, try steel cut and see if they change your mind.

They’re perfect for pressure cooking because they only take 10 minutes in the Instant Pot.  Traditional steel cut oats typically take 30 minutes on the stovetop.  I like to pressure cook them because I’m no good at thinking ahead.  But, some folks prefer to slow cook their steel cut oats.  You can do that in the Instant Pot.  Just follow the same directions as prescribed in the recipe below, but set them to “slow cook” and let them go for 6 to 8 hours on low.

Chocolate Covered Cherries

One of my favorite flavor combos is cherries and chocolate.  This is a healthier spin on that magic mashup utilizing unsweetened cocoa, cocoa nibs, frozen and dried cherries and low glycemic agave nectar.  This breakfast is loaded with fun flavors but not with sugar or processed foods.  Just good quality, good for you stuff that will sustain you through the morning.

Cocoa Nibs

Fair warning, cocoa nibs aren’t for everyone.  I personally love them.  They’re the actual cocoa bean (or seed) before it has been processed into chocolate.  It’s chocolate in its pure, natural state.

They simply take cocoa beans after harvest, ferment and dry them then roast them and remove them from their shells.  These little nibs add an intense chocolate flavor along with some crunch and are considered a super food on the basis of the antioxidants they contain.  So, yep, chocolate is a great option for breakfast!
