I recently did a series of video projects for Dreyer’s and Edy’s Ice Cream for their social media channels. Â Each video required three half-gallons of ice cream in order to produce the videos and the recipes in them. Â But, I only needed a few scoops per video, so I was left with a lot of leftover ice cream. Â One of the recipes used Dreyer’s Caramel Delight ice cream and it got me thinking that caramel and pumpkin would make a killer combo. Â These Pumpkin Pie Milkshakes were inevitable.
The best part about them is that they are definitely more Pumpkin Pie than Pumpkin Spice. Â Yes, I was very conscientious in naming this recipe. Â These milkshakes are for the true pumpkin pie fans, like Mr. Simon. Â He took a few sips and smiled. Â I knew I had concocted a frozen version of his favorite dessert. Â Of course, the second I threw that canned whipped cream on top, he turned up his nose and left the kitchen. Â So high maintenance that one.
In terms of the ice cream for this recipe, it’s 100% flexible. Â You could definitely go with a vanilla ice cream and then just add in a few tablespoons of caramel topping. Â But, the caramel is an important part of the recipe in order to capture the right amount of sweetness.
In making this recipe, I also learned to appreciate my blender. Â I’m spoiled rotten and have a Vitamix, which does an outstanding job of blending the ice cream and milk together without needing too much liquid. Â That being said, depending on the type of blender you’re using and how thick you like your shakes, you can adjust the amount of milk in this recipe accordingly.
Happy Halloween my pretties!
