Dorm Room Recipes

For those who are college bound in the fall, looking for something easy to cook up in a dorm room, I’ve got some dorm room recipe inspiration for you.  Both of these recipes have flexibility and you can add your own creative twist to them.  Change up the veggies, spices, sauces, go crazy!  But, the same principals apply when it comes to making these microwave meals.

Microwave Egg Sandwich

Join me on campus with my friend Aziz as we make up these Microwave Egg Sandwiches and struggle with the eternal debate of calling it a dorm or a residence hall:

These are not only good for hungry college students, but a great option for busy people in general.  Of course, it’s important to know your own microwave and perfect the timing on these.  I find that 90 seconds on high works in general for most microwaves.  Mostly, you’re looking for it to be completely cooked through, no longer runny.  But, try not to over-cook it as that will turn it into a rubbery disk.

Description

An Easy Egg Sandwich made in the microwave


Ingredients

Scale
  • 1 English Muffin or two slices toast
  • 2 eggs
  • 1 Tbs diced peppers
  • 2 tbs spinach chopped
  • 2 tsp salsa
  • Salt
  • Pepper

Instructions

  1. Combine eggs, peppers, spinach, salsa, salt and pepper in a coffee mug and whisk with a fork until eggs are mixed up.
  2. Microwave the eggs in the mug for 2 minutes. Eggs will puff up while cooking.
  3. Turn the eggs out onto an English Muffin or slices of toast, topped with more spinach.
  4. Serve warm or wrap and reheat later.

Need a dinner idea, too?  This one’s great because you can prep everything at the beginning of the week and toss in the liquid ingredients when you’re ready to eat before microwaving.  It’s a time saver and if you make it with vegetable bouillon, it’s 100% vegan!

Microwave Coconut Curry

Just like the sandwich recipe, this one is open to interpretation.  Use whatever spices, veggies and other add-ins that make you happy.  No limits to the possible combinations you can make in a mason jar.  Just be sure the mason jar is the microwave safe kind.  They do have decorative ones not intended to be nuked.

Microwave Coconut Curry

Description

A quick vegetable coconut curry in the microwave


Ingredients

Scale
  • 1/2 cup sweet potato, diced
  • 1.5 cups water
  • 1/2 cup minute rice
  • 1/4 cup pepper diced
  • 1/2 cup spinach chopped
  • 1/4 cup corn or diced carrots
  • 1/2 vegetable bouillon cube
  • 1/2 cup coconut milk
  • sriracha to garnish

Instructions

  1. Place sweet potato and water into a microwave safe container (or large mason jar) and microwave 3 minutes to soften the potato.
  2. Add remaining ingredients int the jar and microwave another 4 minutes.
  3. Remove from microwave and let sit 5 minutes.
  4. Eat straight from the jar garnished with sriracha.
