Cinco de Mayo Recipe Roundup

I don’t know what got into me!  Well, I take that back. I published a ton of Mexican-ish recipes over the past two weeks because I adore the culture and cuisine of our neighbors to the south.  Despite the fact that Cinco de Mayo isn’t a huge deal in Mexico (no, it’s not their Independence Day) I take it as an opportunity to go full tilt on my love of all things Latin.  Some day, when I find the money, you’ll find me in my brightly colored, Dia de Los Muertos decorated, Saltillo tiled kitchen, sipping limeade out of a blue glass.  For now, you all know what I’m working with, but some day…some day…

Meanwhile, in case you’re looking for some Cinco de Mayo dinner inspiration, I’ve rounded up a few of my favorites.

Mexican Style Street Corn

They get messy and you’ll need to make sure to serve ’em with toothpicks, but this roasty sweet street corn is a classic.

Spinach & Artichoke Enchiladas

By no means authentic, but if you like spinach and artichoke dip and want it in enchilada form, here’s your entree idea:

Adobo Mexican Rice

I make mine extra spicy with jalapenos, but no matter what kind of pepper you use, this rice is packed with sabor!

…any excuse to make a hot cheese, am I right?!?

Three Cheese Enchiladas with Mushrooms

Again, unconventional enchiladas, but the sweet tomatillo apple sauce on these is a family favorite.

Pork Carnitas

These are my signature dish.  Sweet and savory citrus infused pork shoulder in soft corn tortillas.
